Oh, Avocado. I feel you. It must be hard to be the scapegoat for the problems of one generation and the angst of another. But, you’re still there. Still going strong. On the chalkboard menus of that hipster cafe and the kitchen of a student on a budget.
This is my version of an Avocado toast. Avocado does nothing for me when it’s all by itself but slather it onto a toast with four other ingredients and it is delicious to wat and pretty to look at. And, I am vain enough to eat something just because it’s pretty.
Step 1: Take a ripe avocado and remove the pit. Scoop out the mushy avocado and keep aside.
Step 2: Slice some red or white onions.
Step 3: Toast a Toast.
Step 4: Butter your toast and slather on a generous amount of a creamy dip of your choice. I used Summer Fresh Spinach Dip but Hummus or Ranch go really well too.
Step 5: Spread the mashed avocado on top.
Step 6: Top with the sliced onions and a pickle. I thought it was time for the stunner of a radish to finally make an appearance so I used Flora and Farmer’s Radish and Cilantro pickle.
Step 7: Season with salt and red chilli flakes. Relish and enjoy!
